Steps to Make Basanti Pulao
To make this Bengali pulao, we should follow the following procedure:
- Firstly, rinse the rice with water and soak them in 3-4 cups of water for at least 30 minutes. Till then, we can heat the rice bran oil in a pan over medium flame.
- Once the oil is hot, we have to add our ingredients like raisins and cashew nuts to the pan and fry until they turn golden brown. They make our pulao tastier and healthier and also, they add a special texture to pulao.
- Now we have to add green cardamoms, cloves, cinnamon sticks, and bay leaf and fry it for 3-4 seconds.
- Then drain the water from the rice and add it to the pan and mix it well.
- Now, add water, sugar (a little bit), turmeric powder, and saffron strands to the pan and stir it gently. During this time, the flame should be set to low.
- After this, cover the pan with a tight-fitting lid and cook the rice for 20-25 minutes until all the liquid is absorbed by the rice and the rice is cooked perfectly.
- Now, we can remove the pan from the heat and let the rice rest for 5 minutes so that they get a perfect fluff as we serve it.
- And finally, our pulao is ready, we can just garnish it with almonds and pistachios and saffron strands to make it look good.
